An expressive wine from this classic variety.

They call it “the winemaker’s grape”. We make this Chardonnay in the style we really enjoy. Perfectly ripe fruit, barrel fermented, and barrel aged. A luscious and textured wine, full of fruit and youthfulness, and enough backbone to look to the future with confidence.

Colour: Pale gold.

Bouquet: White stonefruit, vanilla and butterscotch.

Palate: Honeyed nuts, apricots, and biscuity brioche, with good midpalate weight and mouth filling complexity.

Food Match: Fresh oysters, roast chicken and pinenuts, summer ratatouille.

22 brix.

Pressing:

Light whole bunch press, no skin contact.

Fermentation:

100% barrel ferment – 50% in new puncheons, 50% in seasoned oak barriques. Wild yeast ferment, full malo.

6 months in wood with bâtonnage, lightly fined, sterile filtered.
