This 2020 Celestia Pinot Noir is made from perfectly ripe Pinot Noir and the absolute minimum of handling.
100% whole bunch fermentation, short vatted into seasoned puncheons and aged for 2 years. No filtering and no fining. The result is a very perfumed wine with aromas of rosehips, black tea, black fruit and undergrowth, with a dense and dark palate, fine tannins and a satiny texture.

Bouquet: Very perfumed – rosehips, black tea, dark berryfruit, forest floor.
Palate: Dense and dark, black cherries and black plums, dried herbs, fine tannins, satiny texture.
Food Match: Try it with grilled salmon, barbequed lamb, or spicy duck.
Cellaring: Delicious now, and will continue developing for 10+ years.

Crush:
No crush and minimal handling. 100% whole bunch, hand-picked direct into fermenter in vineyard.
Fermentation:
Wild ferment, no punchdowns or pump overs. After 3 weeks, pressed to 500L puncheons to finish primary ferment. Spontaneous malo in barrel.
Élevage:
2 years in seasoned oak. Gentle racking – no filtering or fining.
