Winemaking

Pressing:  whole bunch press, no skin contact

Fermentation: 100% barrel ferment, seasoned oak

Low temp yeast, controlled ferment over 21 days

Elevage: 2 months on lees, daily batonnage

Lightly fined, sterile filtered

Alcohol: 13%

TA: 7.4 g/L

pH: 3.03

RS: 5 g/L      

 

Tasting notes

Colour: Pale straw

Bouquet: Honeyed stonefruit and citrus

Palate: Lemongrass and lime zest, flinty minerality, balanced by lively acidity

Food Match: Great as an aperitif, with herby salads, and fresh seafood.
