Winemaking
Crush: full destem, light crush.
Fermentation: 7 day soak, 7 day ferment, 10 day maceration before pressing.
Elevage: 11 months in French oak, 20% new. Spring malo in barrel.
Lightly fined with gelatin.

Tasting notes
Colour: Purple – ruby
Bouquet: Sweet aromas of red berries, with a hint of violets and vanilla followed by secondary earthy notes.
Palate: Black cherry and red berryfruit characters with a hint of cinnamon and a chocolately finish supported by firm tannins.
Food Match: Ideal with gamey meats. It also suits lighter dishes such as salmon and lamb.
