2011 was an excellent vintage, with a long warm autumn. Cropping was kept to 1.5 tonnes per acre. Harvested at 25 Brix
Winemaking
Crush: full destem, light crush.
Fermentation: 7 day soak, 7 to 10 day ferment, 7 to 10 day maceration before pressing.
Elevage: 13 months in French oak, 30% new. Spring malo in barrel.
Lightly fined with gelatin.

Colour: Ruby hued
Bouquet: Dark plum and black cherry characters
Palate: Cherry, plum and dried-thyme flavours, and a toasty, spicy complexity. Well supported by firm tannins.
